Over the past month, I've been in pursuit of my perfect at-home wing. Here was my checklist:

1. They have to be baked, because I hate frying things and splattering oil all over my kitchen.
2. They must not require any stovetop cooking. I just want to throw the wings on a sheet pan and walk away with minimal other preparation.
3. Above all, they must be flavorful.

After a lot of trial and error, I landed on this wonderfully simple recipe. They get baked at a nice, high heat so the skin gets crispy but the meat stays nice and moist. A quick soy sauce marinade seasons the meat, while the simple, no-cook glaze at the end adds that sticky, spicy, salty finish that I'm always looking for in a wing. These are truly perfect for game day—or, you know, a random Wednesday night.


Ingredients

3 lbs wings
1/3 cup, plus 2 Tbsp soy sauce 
1/4 cup honey 
1 Tbsp sriracha, or more to taste
1 tsp salt 
sesame seeds, for serving 

Directions

Pre-heat the oven to 400 degrees. 

Toss the wings in 1/3 cup soy sauce, plus 1 tsp salt. Let sit while the oven comes up to temperature.

Arrange the wings, skin-side down on a sheet pan lined with parchment paper. For three pounds of wings, you'll need two pans to ensure the wings are properly spaced and get nice and crispy.

Cook wings for 40 minutes total, flipping them half-way through. 

Whisk together the honey, remaining soy sauce and sriracha in a large mixing bowl. 

When the wings are done cooking, let them cool for a couple minutes, then add them to the bowl with the sauce and toss well to coat. Plate and finish with a dusting of sesame seeds.
