The pinnacle of annual sporting endeavors is upon us, America! It's almost Superbowl Sunday. And while, as a Texas-raised woman and general fan of competitive sports, I'm excited to actually watch the big game, I would be lying if I said that snacks weren't an integral part of the festivities. This year, alongside the mainstay wings and requisite beer, I'll be serving queso fundido. For the uninitiated, this delightful appetizer is a Mexican-born dish made of melted cheese and chorizo. I've add a layer of refried beans beneath and served them with charred flour tortillas for optimal cheese taco making. This dish needs to be served hot and eaten immediately—which I've found is very easy to accomplish.
ingredients
1/2 lb Mexican chorizo
8 oz Monterrey jack cheese
8 oz refried beans (half of a can)
cilantro, to garnish
flour tortillas

Preheat your oven to 400 degrees.
Spread the beans in an even layer across the bottom of an oven-proof pan. Cast iron works especially well because it retains heat and keeps the cheese melty for longer.
Remove the chorizo from its casing and brown it in a pan over medium heat, breaking it up as you go. Once it's cooked, remove it from the pan and drain the fat on a plate lined with paper towels.
Add the chorizo on top of the beans, reserving a bit to garnish.
Grate the cheese and layer it on top of the beans and chorizo. Place the pan in the oven and cook for about 12 minutes, or until the cheese is fully melted.
Garnish with the remaining chorizo and the chopped cilantro. Serve and eat immediately with tortillas and/or tortilla chips.
Note: this recipe can easily be doubled or even tripled for a crowd!
