Back in my table-waiting days I would, on occasion, come in to work a little worse for the wear. On one such day, the bartender on staff took pity on 22-year-old me and handed me a gloriously cold glass of ginger ale spiked with bitters and told me to drink up. The tonic was as close to a cure as I could hope for, and over the years I've made just a few small tweaks to my go-to hangover spritz. For all you lovely people partaking in Dry January, this is a great drink to have on hand when you're craving something a little more interesting than water.

ginger beer
lime
Angostura bitters
crushed ice

If you're working with whole ice cubes, put a handful in a reusable plastic bag, wrap in a dish towel and give it some good whacks with a rolling pin. I like my crushed ice to be grape-sized as it provides plenty of surface area without melting too quickly.

Fill your glass with ice, then add about 7 oz. of ginger beer. Note: I call for this specific amount because that's how much comes in a bottle of Fever-Tree, which is my preferred brand of ginger beer. If you you want to add more or less, no problem! Just adjust the lime juice and bitters proportionally.

Add a generous squeeze of lime juice and 10 dashes of bitters and gently stir. Taste and adjust proportions if you like.
